Every year at this time, the time when the 'season of plenty' is at it's peak, the boss looks at what's been grown and just what's available and necessary for the winter cupboard.
A couple of weeks ago I lifted the garlic and even if you make ropes of the bulbs you don't get through it fast enough before it starts to shoot again and turn bitter. This year a different plan was conceived, we froze some individual cloves in bags, the small bulbs were cooked, mashed and put ice trays and the bulk was pickled in white vinegar, sealed in 1lb Kilner Jars and it's been stored in the fridge for easy access.
All being well there'll be little or no waste and we've got a handy supply of garlic easily to hand in the kitchen, a great result from the best crop yet.
Garlic and onion. If there's a better flavor, I haven't found it. Cheers

Never ever thought of pickling it before TT! Great idea - lost loads the other year as we couldn't get through it quick enough...I imagine it's nice in a salad or with other pickles when done....may try in with a jar of eggs!! Enjoy! TTFN Dickie
